This is a unique product in the food and wine tradition of the region. The ‘nfigghiulate were prepared in the homes of the three towns destroyed by the 1968 earthquake: Poggioreale, Salaparuta and Gibellina. It is a product that encapsulates knowledge passed down from mother to daughter, always recalling the teachings once given by grandmothers. It is a preparation and production technique that has its roots in the home kitchen. Specifically, ‘nfigghiulate are pinwheel-shaped rolls made from bread dough, filled with local pork sausage, Sicilian pecorino cheese, onion, black pepper, and local extra virgin olive oil. Field research has shown that ‘nfigghiulate represent one of the few typical savoury dishes of Poggioreale, as the region is otherwise better known for its wide variety of traditional sweets.
