Al Tabun (traditional oven)
Al taboun is one of the famous traditional tools used for baking. It is made of clay. It is handmade from ground pottery and yellow clay obtained from water swamps or from inside the nearby region. The clay is kneaded together and placed on the sides of a pit until it takes the shape of the pit, then it is lined with smooth rounded gravel.
It is shaped like truncated cone with an opening at the top used to place the dough sheets onto its base and remove them when cooked using a metal hook called “al-maqla’a,”. The Maqla’a is a metal rod with a hook at one end. The oven has a hole-shaped opening parallel to the base for extracting ash from its interior. Animal waste is used a fuel to make the fire and it is used for baking bread.
