Description:
It is one of the famous traditional dishes in Northern Jordan. This dish is usually made on special occasions and in social gatherings and during the harvest of olives, especially because olive oil is one of its main ingredients. In fact, olive oil is available during all times of the year, but it is especially important in winter because its consumption warms the body. The dish consists mainly of whole wheat flour, chicken or red meat, olive oil and a large amount of chopped onions.
Cooking Al Makmoura goes through different phases: First the chicken or meat will be boiled in water flavored with laurel leaves, salt and pepper. Then in a deep bowl, add the whole wheat flour, sesame seeds, the nigella sativa seeds, a pinch of salt and oil are added. Mixing the ingredients, then adding water gradually until having a soft, non-sticky dough, let it rest for 10 minutes then it is divided the into medium size balls, one of the dough balls is taken, greased with olive oil and stretched with hands until it becomes thin and circular. The first layer of dough is put into the tray and up the edges like a pie crust. Some fillings (olive oil, onions, chicken or red meat with salt, pepper, cumin, cardamom and turmeric) placed on the top of the layer of dough. A knife is used to make two or three holes in the dough and pour a little olive oil over it. The process is repeated for about five or six times or until you reach the top of the tray that will be used, then covered well with aluminum foil. The oven is preheated to 320 °F (160 °C). Al Makmoureh is then baked for two hours until the chicken is tender, and the dough is golden from the top and the edges. After Removing from the oven, it is cut into triangle shapes like cake and served hot.
