Cassatedde sfogliate of Poggioreale
Cassatedde sfogliate is a traditional food of Poggioreale (Sicily).
This recipe has been passed down through many generations—specifically from mother-in-law to daughter-in-law. The preparation of cassatedde sfogliate (flaky cassatelle) places great emphasis on the dough, which must be worked into fine layers to achieve the signature flakiness.
They are typically prepared from October to May. The filling is made with ricotta cheese, though a custard cream variation is also popular and highly requested.
